TP x Tommy Banks

We have developed a fruitful relationship with multi-award-winning chef Tommy Banks and his family over the past couple of years, and we are excited to expand this even further with more exciting plans for 2024!

For anyone that doesn't already know, here is a brief summary of all of the amazing parts of the Banks' family business, and how we work with each of them:


THE BLACK SWAN AT OLDSTEAD


Nestled on the edge of the North Yorkshire Moors, The Black Swan is a Michelin-starred, 4 AA Rosette restaurant. Stylishly grounded in tradition and culture yet cut through with modern, gastronomic creativity. Our first collaboration with Tommy Banks and his family was Verbalist - now rebrewed multiple times for this iconic venue. Verbalist is a truly refreshing aperitif of a beer, at a very drinkable 4.5% abv. Lemon verbena is paired with Simcoe and Mosaic hop varieties for a delicious citrus kick.

ROOTS


In the heart of historic York, the Michelin-starred Roots combines innovative cooking techniques with one-of-a-kind ingredients and exceptional service. Under the direction of head chef Will Lockwood, enjoy a gastronomic tasting menu experience inspired by the heritage of their farming and growing roots in a modern, laid-back, city centre dining room. We produce a unique house beer for Roots: Beneath the City. Balanced and refreshing with a floral, bitter finish, the addition of foraged woodruff to this pilsner-style lager adds an earthy complexity and a honey-like sweetness.


THE ABBEY INN AT BYLAND


A beautiful country pub with rooms in the heart of the North Yorkshire Moors, serving a seasonal menu alongside real ales, great wine and seasonal cocktails. Our bestselling 5.1% American Pale, Disco King, is available as a permanent draught line on their extensive bar.
